Spinach-Basil Pesto Pasta

Ingredients [serves 4]


500g Spinach - Wash these leaves

150g Basil - Wash these leaves

35 Pistachios

50g Cheddar cheese [optional, skip to make this dish vegan]

20 Pine Nuts

4 Garlic Cloves - Chop into large pieces

2 Table Spoons Olive Oil

1 Green Chilli / 1 Table Spoon Chilli Flakes

1/2 Cup Water

1 Table Spoon Salt

1 Pack Linguine

Blender


Place the spinach, basil, pistachios, pine nuts, garlic, olive oil, chilli, water and salt in to the blender.


Tip: Add the leaves in 2 halves to check the consistency.


Pan #1

Drop the linguine into heavily salted boiling water for 8-9 minutes.


Bowl #1

Mix the sauce into the linguine and optionally add cheddar cheese, pepper, pine nuts and chilli flakes for a garnish.
